Ingredients
  

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions
 

  • Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
  • Season the chicken breasts with salt and pepper. Cook the chicken on a grill or in a skillet over medium-high heat until cooked through, about 6-8 minutes per side. Once cooked, let the chicken rest for a few minutes before slicing it thinly.
  • In a large mixing bowl, combine the cooked pasta, sliced chicken, mixed vegetables, chopped green onions, and chopped cilantro (if using).
  • In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or brown sugar, minced garlic, grated ginger, lime juice, salt, and pepper to make the dressing.
  • Pour the dressing over the pasta and chicken mixture in the mixing bowl. Toss until everything is evenly coated with the dressing.
  • Taste and adjust the seasoning of the salad with salt and pepper, if needed.
  • Divide the Asian Chicken Pasta Salad among four salad serving plates or bowls.
  • Garnish each serving with chopped peanuts or cashews and sesame seeds, if desired.
