Ingredients
  

  • 2 lbs beef chuck tenderloin, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 nos jalapeño peppers, finely chopped (adjust to taste)
  • 1 cup beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Method
 

  1. Prepare the Beef Chuck Tenderloin:
    Start by cutting the beef chuck tenderloin into bite-sized pieces. Season with salt and pepper to taste.
  2. Sauté the Onions and Garlic:
    Heat the vegetable oil in a large skillet or Dutch oven over medium heat. Add the diced onions and minced garlic, and sauté until they are soft and translucent, about 5 minutes.
  3. Add the Peppers and Jalapeños:
    Once the onions and garlic are softened, add the diced red and green bell peppers, as well as the finely chopped jalapeño peppers. Cook for another 5 minutes until the peppers are slightly softened.
  4. Cook the Beef:
    Push the vegetables to the side of the skillet and add the beef chuck tenderloin pieces to the center. Cook the beef until it is browned on all sides, about 5-7 minutes.
  5. Add the Liquid and Seasonings:
    Once the beef is browned, pour in the beef broth and diced tomatoes with their juices. Stir in the tomato paste, chili powder, ground cumin, and paprika. Season with additional salt and pepper to taste.
  6. Simmer and Cook:
    Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet or Dutch oven and let the Spicy Beef Chuck Tenderloin simmer gently for about 1 hour, stirring occasionally, until the beef is tender and the flavors have melded together.
  7. Serve:
