Ingredients
  

  • 6 Piece Large Eggs
  • 6 Piece Large flour tortillas (8-inch diameter)
  • 6 Slice Cooked bacon or sausage links
  • 1 Cup Shredded Cheese (such as cheddar or Monterey Jack)
  • 1 Cup Diced cooked potatoes (optional)
  • ½ Cup Diced bell peppers (any color)
  • ¼ Cup Diced onions
  • Salt and pepper to taste
  • Salsa, hot sauce, or avocado (optional, for serving)

Method
 

  1. Prepare Ingredients:
    Chop any vegetables (like onions, bell peppers, or tomatoes) and meats (such as bacon, sausage, or ham) you plan to use. If using cheese, grate it if necessary.
  2. Cook Fillings:
    Heat a skillet over medium heat and add any raw meats, cooking until they're fully cooked through. Then, add any chopped vegetables and cook until they're softened. You can also cook any other ingredients you're using, like potatoes or beans, in the skillet until they're heated through.
  3. Scramble Eggs:
    In a separate bowl, beat eggs with a pinch of salt and pepper. Push the cooked fillings to the side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until they're fully cooked and then mix them with the other fillings in the skillet.
  4. Warm Tortillas:
    If your tortillas are not already warm, you can heat them in a skillet for a few seconds on each side or wrap them in a damp paper towel and microwave for about 20-30 seconds until warm and pliable.
  5. Assemble Burritos:
    Lay a warm tortilla on a flat surface. Spoon some of the cooked filling onto the center of the tortilla, being careful not to overfill. Sprinkle with cheese if desired
  6. Roll Burritos:
    Fold the sides of the tortilla over the filling, then fold the bottom of the tortilla up over the filling. Roll the burrito tightly away from you, tucking in the sides as you go, until it forms a tight cylinder.
  7. Serve:
    Place the assembled burrito seam-side down on a plate and serve immediately. You can also wrap the min aluminum foil to keep them warm if serving a large batch.
  8. Optional Garnishes:
    Serve with salsa, sour cream, avocado slices, or additional cheese on the side for dipping or topping the burrito.
