Ingredients
  

  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup grated carrots
  • 1 cup chopped bell peppers (any color)
  • 1/2 cup chopped onions
  • 2 cloves garlic, minced
  • 1/4 cup gluten-free bread crumbs or almond flour
  • 2 table spoons ground flaxseeds
  • 2 tablespoons gluten-free soy sauce or tamari
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

  1. In a large mixing bowl, mash the black beans with a fork or potato masher until they are mostly mashed but still have some texture.
  2. Add the cooked quinoa, grated carrots, chopped bell peppers, chopped onions, minced garlic, gluten-free breadcrumbs or almond flour, ground flaxseeds, gluten-free soy sauce or tamari, ground cumin, paprika, salt, and pepper to the bowl with the mashed black beans.
  3. Mix all the ingredients together until well combined. If the mixture seems too wet, you can add more breadcrumbs or almond flour to help bind it together.
  4. Divide the mixture into 5 equal portions and shape each portion into a burger patty.
  5. Heat a skillet or grill pan over medium heat and add a drizzle of olive oil.
  6. Once the pan is hot, carefully place the veggie burger patties in the pan and cook for about 5-7 minutes on each side, or until golden brown and cooked through.
  7. Flip the burgers gently using a spatula to ensure they don't fall apart.
  8. Once cooked, remove the veggie burger patties from the pan and let them cool slightly before serving.
  9. Serve the gluten-free veggie burgers on gluten-free burger buns with your favorite toppings such as lettuce, tomato, avocado, and condiments.
