  • 1 Cup unsweetened almond Milk
  • 2 tablespoons vegetable oil
  • 1/4 Cup Unsalted Butter
  • 1 Teaspoon Vanilla Extract
  • Cooking spray or extra oil for greasing the pan

Method
 

  1. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  2. In a separate bowl, combine the almond milk, vegetable oil, and vanilla extract. Whisk until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps in the batter are okay.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or oil
  5. Once the skillet is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes.
  6. Carefully flip the pancakes with a spatula and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.
  7. Transfer the cooked pancakes to a plate and keep warm while you cook the remaining batter. You may need to adjust the heat slightly as you go to prevent burning.
