Ingredients
  

  • (3.3 lbs) Meat of pork shoulder or chicken breast, cut into cubes
  • 1/2 cup Olive oil
  • 2 pcs Lemons
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Vegetables for Skewering:
  • 2 large Onions, cut into chunks
  • 2 large bell peppers (red, yellow, or green), cut into chunks

  • 1 Grill (charcoal or gas)

Method
 

  1. Prepare the Marinade:
    Ø In a bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Mix well.
  2. Marinate the Meat:
    Ø Place the meat cubes in a large resealable plastic bag or shallow dish.
    Ø Pour the marinade over the meat, ensuring all pieces are coated evenly.
    Ø Seal the bag or cover the dish and refrigerate for at least 1-2 hours, or overnight for maximum flavor.
  3. Prepare the Vegetables:
    Ø While the meat is marinating, prepare the onions and bell peppers.
    Ø Cut the onions and bell peppers into chunks suitable for skewering.
  4. Skewering Process:
    Ø Preheat your grill to medium-high heat.
    Ø Thread the marinated meat cubes, onions, and bell peppers onto skewers, alternating between meat and vegetables for even cooking.
  5. Grilling Souvlaki:
    Ø Place the skewers on the preheated grill.
    Ø Grill the souvlaki for about 15-20 minutes, turning occasionally, until the meat is cooked through and the vegetables are charred and tender.
  6. Serve Hot:
    Ø Remove the souvlaki skewers from the grill and let them rest for a few minutes.
    Ø Serve the souvlaki hot with pita bread or wraps, tzatziki sauce, and your favorite sides like Greek salad or roasted potatoes.
